This slice goes by many different names: millionaires slice, millionaires shortbread, caramel shortbread, caramel squares, caramel slice and even Wellington squares. But no matter what you call it, this is hands-down the best slice recipe. It is unapologetically sweet and so so decadent.

I make this slice whenever we have a big fishing trip or big weekend hike as a sweet treat to look forward to. That is if it even makes it to the start of the trip!

How to make millionaires slice

This recipe is simple enough to follow, and is broken in to 3 main sections. The biscuit base, the caramel filling, and the chocolate top. My recipe is different (and arguably the best) because I only use dark chocolate on the top. This helps to cut some of the sweetness with the bitterness of the chocolate. I also crack some salt on top to add another dimension of flavour to compliment the chocolate and caramel. And lastly rather than shortbread base, I have constructed a perfect biscuity base that is unparalleled by other recipes that I have trialled.

Ingredients

For the base we just need flour, brown sugar and butter. The caramel filling is made with butter, brown sugar, vanilla extract, and sweetened condensed milk. And lastly the chocolate top is made with dark chocolate, small bit of oil, and a sprinkle of salt.

Tips and tricks for perfect millionaires slice

I promise this recipe is super easy, even though it has 3 parts. The chocolate step is basically just melting chocolate with a little oil, which is easy peasy. The base is mixing all the ingredients together, then pressing it in to the tin - also super simple. And the caramel filling, arguably the trickiest part - is just putting it all in the pot and letting it bubble away for 5minutes or until a dark rich caramel colour. The only advice is DO NOT STOP STIRRING the caramel, it loves to stick to the bottom of the pot, so make sure to keep mixing when there is any heat around. Thats it. You have got this!

Ingredients
    Base ingredients
  • 1 1/2 cup Flour (180g)
  • 1/2 cup Brown Sugar (100g)
  • 125 grams Butter (softened)
  • Caramel filling ingredients
  • 125 grams Butter
  • 1/2 cup Brown Sugar (100g)
  • 1 teaspoon Vanilla extract
  • 395 grams Sweetened condensed milk (1 tin)
  • Chocolate topping ingredients
  • 200 grams Dark Chocolate (70-80%)
  • 1 teaspoon Oil (Any neutral flavoured oil)
  • 1 teaspoon Salt (Flakes or chunks)
Instructions
    Biscuit base instructions
  1. Preheat the oven to 180ºC, and grease/line a rectangle pan.

  2. Mix all the base ingredients together until all the butter lumps are gone.

  3. Press the base in to the tin firmly and bake for 15mins, or until golden brown.

  4. Remove the base from the oven, let it cool down, and reduce the oven temperature to 160ºC.

  5. Caramel filling instructions
  6. Put the butter, brown sugar and vanilla extract in to a saucepan and heat over low heat until the butter is melted.

  7. Once bubbles start forming, add in the sweetened condensed milk and whisk the caramel. Mix for ~5mins until large slow bubble start to form.

    Make sure to continuously mix the caramel because it burns easily!
  8. Remove from the heat and pour over the base, then bake at 160ºC for 12-15mins until golden brown

  9. Let the filling + base cool down completely before making the chocolate topping.

  11. Gently melt the chocolate and oil in microwave and mix to combine.

  12. Pour the chocolate on top of the cold base + filling and gently spread with a spatula. Crack or sprinkle a small amount of salt on top of the chocolate and place in the fridge to set. Cut in to desired squares once cooled completely.
