Hey home bakers! Today, I want to share with you a recipe for a delightful sweet treat that has quickly become my go-to slice recipe – the Weetbix Slice. This is not just any slice; it’s a lemony date Weetbix slice that’s incredibly easy to make and is always a crowd-pleaser.

Just like Pavlova, Fairy bread and Phar Lap – the internet is divided on whether this delicacy belongs to NZ or Australia. Either way, it was a staple for my lunchbox growing up in NZ, and one I know you will all certainly enjoy too.

This is my Nanas original recipe, which is a lemon weetbix slice. I actually didn’t know chocolate versions existed until looking in to other recipes on the internet!

How to make Lemon Weetbix Slice

The slice base is a simple melt and mix recipe. To start, you’d need to melt butter, sugar, Weetbix, and flour in a large bowl and mix it together. Press this mixture into a lined baking tin and bake for 15 – 20 minutes. Voila! Your base is done and ready for the icing.

Once your base has slightly cooled down, you can then add the lemon icing. The icing is made by whisking together butter, icing sugar, lemon juice, and zest. If it seems too thick, you can add a dash of boiling water and keep whisking until you achieve a good consistency with no lumps.

This Weetbix Slice is not only easy to make but also uses everyday pantry ingredients. All you need is butter, white sugar, an egg, golden syrup, baking powder, flour, desiccated coconut, weetbix, dates, icing sugar, and a lemon.

The process is simple and straightforward. After preheating your oven, you cream together the butter and sugar until it’s light and fluffy. Then mix in the egg and golden syrup. Add in the baking powder, flour, coconut, crushed weetbix, and dates, and mix until well combined. Press the mixture into a lined tray and bake. Once it’s cooled, you can then add the icing. Let it set, cut into slices, and it’s ready to be served!

  1. Preheat the oven to 175°C (350°F), bake (not fan bake)

  2. Cream together the butter and sugar until light and fluffy

  3. Mix in the egg and golden syrup

  4. Add in baking powder, flour, coconut, crushed weetbix and dates, and mix until well combined

  5. Press in to a rectangular tray lined with baking paper (I used a 20 x 26cm tray)

  6. Bake for 20-25 minutes.

  7. Remove from oven and let cool

Icing

  1. Mix together the icing ingredients to form a thick paste. Place icing over the cooled slice whilst still in its tray and wait for the icing to set
