Using overripe bananas is still a great idea today. Here’s a helpful tip: when you have overripe bananas, wrap them in cling film and freeze them. When you’re ready to make banana bread, simply defrost and mash them up.

You only need pantry staples such as flour, baking powder, sugar, eggs, and overripe bananas for this recipe. To make even more irresistible, we’re adding in a generous handful of chocolate chips. The combination of bananas and chocolate is truly divine, and it makes this bread feel a little more indulgent.

This banana bread is incredibly easy to make, and it's perfect for bakers of all levels. Even if you're new to baking, you'll be able to whip up this bread with ease. It's a one-bowl recipe, which means you'll have less dishes to clean up afterwards - always a bonus!

  1. Pre-heat oven to 180ºC/160ºC fan (356ºF / 320ºF fan bake)

  2. Cream the butter and both the sugars together.

  3. Add in the eggs and a little bit of the flour (2 tbsp) and mix together.

  4. Add in the remaining ingredients (flour, baking powder, mashed banana, and chocolate chips), mixing until just combined.

  5. Bake in a loaf tin for 50 minutes, or until a skewer inserted in to the middle comes out clean. Leave to cool for 10mins until taking out of the tin.

Note

If you want normal plain banana bread, just leave out the chocolate chips. 

Feel free to make other additions such as 1 tsp of cinnamon to change up the flavour, or add in other tasty bites such as walnuts.

Can I use just white sugar?

Yes! I prefer to use a mixture of both sugars to give a slightly more caramelised taste, but its completely fine to just use one type.
